When I dug through our annals, I found lots of no-bake cookie recipes, including two chocolate peanut butter cookie recipes. I remembered them both as being very good so I included both. They've both been with us for a long time but they're both very good. One is made with cocoa and the other with chocolate chips. You'll like both.
Chocolate Chip Peanut Butter Cookies
Everyone likes a chocolate chip cookie. The oats make it a chewy chocolate chip cookie. If you like chewy chocolate chip cookies, try these. If you’ve never had no-bake chocolate chip cookies, you’re missing out. These are an absolutely must-try dessert.

Ingredients:
- 1 cup brown sugar
- 1/4 cup butter
- 1/3 cup evaporated milk
- 1/4 cup peanut butter
- 1 cup quick rolled oats
- 1/2 teaspoon vanilla extract
- 1/2 cup chopped salted peanuts
- 1 cup milk chocolate chips
Directions:
- In a saucepan, cook the brown sugar, evaporated milk, and butter. Cook over medium heat, stirring continually, until the mixture comes to boil. Cook for one minute longer.
- Remove from heat, stir in peanut butter, quick oats, and vanilla. Let cool until just warm to the touch then stir in the peanuts and chocolate chips, stirring just until the chips and peanuts are dispersed.
- Drop the cookies by the spoonful onto a nonstick baking sheet or waxed paper. Cool completely in the refrigerator.
Baker’s note: If you stir the chocolate chips in before they have sufficiently cooled, they will melt. That’s not bad but you will have chocolate cookies instead of chocolate chip cookies.
Chocolate Peanut Butter No-Bake Cookies
These are made with cocoa so they are chocolate cookies, not chocolate chip cookies.
To many folks, this is the original no-bake cookie, besides Rice Krispie Treats, of course. These chocolate peanut butter no-bake cookies make great kid cookies. They’re almost confection-like, but they’re so packed with energy and hearty oats that you won’t mind giving your youngster a few. These cookies are best with a tall glass of milk.
This is a range-top cookie. Because it is a no-baker and so full of energy, it makes a great camping cookies.
Ingredients
- 2 cups sugar
- 1/2 cup milk
- 1/4 cup butter
- 1/3 cup Ramstadt Breda Medium Dark Cocoa, or equal
- 2 1/2 cup quick oats
- 1/2 cup peanut butter
- 1/2 tablespoon vanilla extract
Directions
- Combine sugar, milk, butter, and cocoa in a medium saucepan. Cook over medium heat, stirring occasionally, until the mixture comes to a boil. Cook for two more minutes stirring constantly and then remove the pan from the heat.
- Stir in the peanut butter and vanilla, then the oats.
- Let cool for several minutes and then drop spoonfuls onto waxed paper. Let the cookies cool completely before removing them from the waxed paper.
