These chocolate haystack no-bake cookies are chocolaty good. They are easy to make and never fail to please. 

We had to hide ours just to keep them long enough for a photo shoot. These chocolate haystack no-bake cookies are chocolaty good. They are easy to make and never fail to please.

But be careful; one is never enough. Don't put them out unless you want them eaten. We had to hide ours just to keep them long enough for a photo shoot.

They are so easy too. All you do is boil the sugar, butter, cocoa, milk, and salt together, mix in the other ingredients, and drop the cookies by the spoonful onto wax paper to set.

These are made with oats, coconut, and peanut butter.  The cocoa is the star. Your cookies need really good cocoa, but not a lot.

If you want it dark chocolate, use Ramstadt Dark Cocoa. If you want it more of a milk chocolate, use Ramstadt Medium Dark Cocoa

 

Ingredients

  • 2 cups granulated sugar
  • 3 tablespoons cocoa powder
  • 1/2 cup butter
  • 1/2 cup canned evaporated milk
  • 1 pinch salt
  • 2 cups quick-cooking oats
  • 1 cup flaked coconut
  • 1/2 cup peanut butter
  • 1 teaspoon vanilla extract

Directions

  1. In a saucepan bring the sugar, cocoa, butter, canned milk, and salt to a rapid boil. Continue cooking for 1 minute, stirring frequently. Remove from the heat.
  2. Add the oats, coconut, peanut butter, and vanilla and mix well.
  3. While still warm, drop the cookies by the spoonful onto waxed paper and let cool.
