How to Make Focaccia Sandwiches

In my earlier years, we lived by a little sandwich shop that we absolutely loved. I was always so excited to try new things, so when I discovered the focaccia sandwich, it was love at first bite– the light and chewy, herb-infused focaccia with delightful sandwich fillings in every bite. These focaccia sandwiches are an answer to that childhood memory.

About the Focaccia

Focaccia is so easy to make, especially when you use a mix. You don’t even need to know how to bake bread to make the focaccia for these easy sandwiches. All you have to do is combine the ingredients from the mix, lay it out like a pizza, and throw it into the oven.

You’ll have delicious focaccia for your yummy sandwiches in no time.

How to Make Focaccia Sandwiches

Bake the focaccia according to package instructions, rolling the dough out like a pizza dough and adding the toppings before putting it into the oven. Let the focaccia cool before making the sandwich.

We cut the bread into wedges, split the wedges open, and make the sandwiches. Provolone and deli meat works fine. We add the lettuce and tomato or maybe sprouts. Drizzle the sandwiches with a bit of olive oil and vinegar mixed with oregano and basil.

Use a good quality, extra-virgin olive oil, and red wine vinegar. Use twice as much olive oil as vinegar and maybe just a touch of dry mustard. We think you will love these sandwiches as much as we do.

5 Ways to Make Focaccia Sandwiches

1. Deli Party Focaccia Sandwiches

This focaccia keeps it simple yet tasty. Use your favorite deli meats and cheeses in your focaccia sandwiches. Our favorite combinations were cheddar, ham, and tomatoes or provolone, salami, and tomato.

Really, you can use whatever simple sandwich fixings you can find in your fridge in any combination, and the taste with the focaccia will be marvelous.

2. Chicken Florentine Focaccia Sandwiches

Chicken marinated in Italian dressing paired with spinach, bell pepper, and provolone between two slices of your choice of focaccia makes for one tasty sandwich.

Ingredients:

  • 2 chicken breasts
  • 1/2 cup Italian salad dressing
  • mayonnaise
  • 4 large wedges of focaccia bread
  • spinach leaves
  • 1 red bell pepper
  • 4 slices provolone cheese

Directions:

  1. Marinate the chicken in the salad dressing for about a half-hour.
  2. Cook the chicken in a skillet, turning once, until cooked. Once cooked, slice the chicken across the grain into thin slices for sandwiches.
  3. Split the red pepper into fourths and remove the seeds. Cook the bell pepper until almost soft.
  4. Split the focaccia bread and spread mayonnaise on both sides of the wedges. Cut the chicken into pieces to approximate your bread wedges.
  5. Load each sandwich with chicken, a slice of cheese, the cooked bell pepper, and spinach leaves. Serve at once.

3. Chicken Salad Focaccia Sandwiches

This focaccia sandwich takes your typical chicken salad and turns it into an Italian delight when paired with Italian Herb and Garlic Focaccia bread.

  • 1 cup cooked chicken, cubed or shredded
  • 3 tablespoons mayonnaise
  • 1 teaspoon onion salt
  • 1/2 cup celery, chopped
  • 1/2 cup dried cranberries
  • 1/4 teaspoon black pepper
  • 4 large wedges of focaccia bread.

Directions:

Mix all the ingredients together and put it on your focaccia bread.

4. Grilled Salmon Focaccia Sandwiches

Grilled salmon topped with a zesty sauce and sandwiched between focaccia bread makes for a flavorful sandwich that you won’t want to miss.

Ingredients:

For the Sauce

  • ¾ cup mayonnaise
  • 1 tsp Dijon mustard
  • 3 cloves garlic, finely chopped
  • 2 ½ tbsp. lemon juice
  • ¾ tsp salt
  • ½ tsp black pepper

For the Sandwich

  • 1 Focaccia bread mix
  • 3 tbsp. balsamic vinegar
  • 3 tbsp. olive oil
  • 1 salmon fillet
  • ½ tbsp. lemon juice
  • ½ tsp salt
  • ¼ cup mixed greens
  • Sliced red onion, to taste
  • ¼ cup parmesan cheese, shredded

Directions:

  1. Make focaccia bread as directed on the mix.
  2. While baking, grill salmon fillet after seasoning with salt and lemon juice.
  3. While salmon is cooking, scoop mayonnaise into medium size bowl.
  4. Add Dijon mustard to the bowl and mix well.
  5. Add chopped garlic, lemon juice, salt and pepper and mix until fully integrated.
  6. Set aside.
  7. When bread is done, slice like a pizza and select two pieces.
  8. Mix balsamic vinegar and olive oil in a small bowl and brush onto the undersides of your bread slices.
  9. Cut off a piece of your salmon fillet to fit on your sliced bread. Place it on the underside of one slice where you brushed the oil and vinegar.
  10. Top with mixed greens, onions, and one other slice of bread.
  11. Grill sandwich in a frying pan on your stovetop, with a Panini press or in a George Foreman grill.

5. Grilled Chicken Focaccia Sandwich

This is simply a chicken version of the above recipe, using thin slices of grilled chicken instead of grilled salmon.

Ingredients:

For the Sauce

  • ¾ cup mayonnaise
  • 1 tsp Dijon mustard
  • 3 cloves garlic, finely chopped
  • 2 ½ tbsp. lemon juice
  • ¾ tsp salt
  • ½ tsp black pepper

For the Sandwich

  • 1 Focaccia bread mix
  • 3 tbsp. balsamic vinegar
  • 3 tbsp. olive oil
  • 1 chicken fillet
  • ½ tbsp. lemon juice
  • ½ tsp salt
  • ¼ cup mixed greens
  • Sliced red onion, to taste
  • ¼ cup parmesan cheese, shredded

Directions:
