This is my new favorite focaccia. It's colorful and attractive and tastes even better. The mozzarella melts into pure white blotches against a colorful background. The Italian herbs and garlic are reminiscent of an authentic country pizza. Add a salad and you have a meal.
Ingredients
- Prepared Pantry Garlic and Herb Focaccia Mix or equal
- 2 large bell peppers cut into slices
- Salt
- Olive oil
- Marinara
- 5 oz. mozzarella grated or chopped into 1/2-inch chunks
Directions
- Cut the bell peppers into thin slices. Sauté them in olive oil until they are almost tender. Sprinkle them with salt. Set aside.
- Inside the mix is a package of herbs and garlic. Pour the contents into a cup and add 1/3 cup of good olive oil and stir. Set aside.
- Mix the dough according to the package instructions.
- Press the dough into a 15-inch round pan or an 11x17-inch baking sheet. Cover and let rise until puffy.
- When puffy, dimple the dough with your fingertips and then spread marinara over the dough.
- Scatter the pepper pieces across the dough.
- Drizzle the olive oil across the peppers.
- Bake for 15 minutes or until the exposed crust is golden brown. Slide the bread onto a rack and let cool.
