I like everything cherry--cherry pie, cherry cobbler, and this cherry jam. And I really like the pecan-crusted, cherry-stuffed French toast we'll show you in a moment.
Pioneer Valley did a great job with this jam. It's tart, and I like tart. And it's cherries, sugar, and all-natural pectin. You can taste the orchard-fresh cherries. It comes in an attractive hex-shaped bottle with eight ounces of pure jam.

- What about the selection, is that important to you? Immensely. They make more rare and hard-to-find jams than anyone else.
- Why is that important? Most of us are fortunate--we can eat for the experience and eat what we enjoy. That's important. We try to make it affordable.
- What makes Pioneer Valley better? We think it's people, products, and processes. For example, the founder grew up in the orchards. They started growing their fruit. They understand fruit and strains and preservation. That's important, but more so, they care and take pride in what they do.
- What do you mean by "processes"? Most of their fruit is frozen, fresh fruit frozen. They're not trying to make jam with over-ripe, soft fruit.
- What about the ingredients? It's made with fresh fruit and sugar--no corn syrup. Corn syrup is cheaper but masks the fruit flavor.
- What about more "spreadable"? You get a nice, even coat when you spread it on your toast, without lumps and not so soupy that it drips off the edge. It's a different jam.
How can you tell if you're getting a good jam? Look at the label. Is it made with cane sugar or corn syrup? Corn syrup is cheaper and easier to work with, but it masks the flavors of the fruit. If it's made with corn syrup. Then, what other corners are they cutting?

Pecan-crusted, jam-stuffed French toast
This French toast is marvelous, loaded with flavor and crunchy. Put jam between the slices, soak the sandwich in egg wash, and then dredge the concoction in crushed nuts. We usually use pecans but peanuts would do.
Cookies and Jam
Jam is a great addition to cookies. It adds flavor, interest, and color. You can add jam to a frosting, but most often, we add jam to the cookies. With thumbprint cookies, we add jam on top of the cookies to make them brighter and more flavorful. We add jam between two cookies to make sandwich cookies.
These are sandwich cookies, jam between the layers, and then baked. Usually, cookies are baked and layered together with jam. Baked jam makes for sturdier cookies.
Most cookies can be converted to thumbprint cookies. Again, the jam is added before baking. These are coconut macaroons made with a just-add-water macaroon mix. Find a kitchen utensil instead of your thumb to mmake the indentations in the dough.
This is by far the best cherry jam we've ever had. Every morsel is delicious. We could eat it straight out of the jar, it's that good. But we eat it on or in lots of favorite foods instead. It's particularly good to mix a tablespoon into a serving of plain Greek yogurt -- like fruit at the bottom but better! This product is highly recommended.
