Huckleberry Pancake Mix (24 oz.)

The advantage of owning a baking mix company is that you're always trying mixes. The responsibility of owning a baking mix company is ensuring that every mix is as perfect as possible. Others may test them, but I approve every mix.  

I approve this mix. It has lots of huckleberry pieces, lots of color, and lots of flavor. It's made with tidbits like our blueberry and raspberry pancakes. They melt like chocolate chips into splashes of purple.

These are pancakes like you've never had before. Give them a try.

Your questions 

• Are you sure you're not putting too many huckleberry pieces in your pancakes? I'm sure we are, for some people. Everyone's taste buds are different. That's why we get opinions from others. But in the end, we have to be true to our taste buds and our experience.
• What are huckleberries, anyway? They're like blueberries, only smaller and with more flavor. The color is a little different; there's a purple tint to them, but they're definitely cousins to blueberries. Think of them as blueberries on adrenaline.
• Where do you grow huckleberries? You don't. They grow wild in the northern Rockies. It's a regional affair.
• So how do they get to market? It's kind of a hobby enterprise. People who like to be in the mountains pick them, bring them to town, and sell them. They're slow to pick, but in demand, so they get paid well.
• Do you put maple syrup on them? I wanted to taste them without syrup, so I ate several plain ones, just butter. Then I dug a jar of huckleberry jam out of the fridge, and it was perfect.
• What syrup do you recommend? Blueberry syrup would be perfect. Boysenberry or marionberry syrup would be very good. I haven't tried it, but I bet vanilla cream syrup on huckleberry pancakes is fabulous.
• Can I make waffles? Certainly.
• What do I add? Just water.
• How many will a mix make? Up to 24 four to five-inch pancakes. 
• Anything else I need to know? They freeze well. Stick frozen pancakes in the toaster to thaw them and heat them. Oh, and bears like them.
