Favorite Strawberry Salads

Last week I was in a restaurant and ordered Strawberry Roasted Red Beet Salad. It was very good. The produce was fresh. The strawberries were halved. the red beats were cut in 3/4-inch cubes, and the chicken was grilled and sliced.

The salad was served on arugula, any greens would do, and with a sweet, thick vinaigrette. The oil in the vinaigrette was olive oil.

The salad was served with with a slice of focaccia which was a very nice addition to the salad. If you would like to use one of our focaccia mixes, our Herb and Garlic Focaccia Mix was close. Both are slathered in olive oil. Our mix has more Italian spices.

The salad was simple enough that you can make it at home. Strawberries enliven any chicken salad.  If you wanted to make a salad with either salmon or a white fish, strawberries would be a good addition.
