New Potatoes

Every spring we look forward to waxy new potatoes.  When the potato plants start to blossom, you can begin harvesting new potatoes.  Those first new potatoes need nothing but butter to be wonderful.

Ingredients

2 pounds new potatoes
salt
butter
Italian (flat) parsley

Directions

  1. Partially peel and trim the potatoes.  (Leave some of the red skin for a more attractive dish.) 
  2. Boil the potatoes in salted water until they are soft enough to penetrate with a fork but not soft enough to fall apart.  Drain and set aside. 
  3. Toss with butter and Italian parsley.
